Old Time Christmas Treat Apple Leather Recipe

Apple Leather Recipe
old time Christmas Treat

preheated 250 degee oven

3 cups applesauce
1/4 tsp nutmeg
1/2 cup sugar
powdered sugar
chopped nuts (optional)

In small bowl:
mix applesauce, nutmeg and sugar.
Spread in shallow pan 1/2 " thick.
Bake for 3 hours.

Take out and when nearly dry,
dust surface with powdered sugar and
place the apple mixture on the surface.
Pat down, add chopped nuts if desired
roll up mixture like a jelly roll.
Slice thin.

Store in airtight container.

Apple leather was a special treat, usually saved for Holidays and Birthdays

from early 1900's



2 Tablespoons liquor
1 Cup milk, hot or cold
sugar, to taste

Add 2 Tablespoons Brandy, Sherry or Rum to 1 cup of Milk.
Stir.
Sweeten to taste.
Serve at once.

Wash, peel and quarter a sour apple.
In a saucepan:
cover quartered apple with water and simmer until tender.
Mash to a pulp in the water.
Sweeten with sugar to taste.
cool
Add enough water to make 1 glass full

Old Time Sweet Kentucky Cider Pie Recipe

1 cup sugar + 4 Tbls for meringue
6 Tbls flour
2 cups apple cider
1/2 cup water
2 eggs, separated
1 baked pie crust

In large saucepan mix sugar and flour.
Add cider, water and 2 well beaten egg yolks.
Cook until thick and pour into baked pie crust.

Using 2 egg whites and 4 Tbls sugar, make up a meringue for top of pie.
Place in medium hot oven to brown meringue.

Kentucky Coffee Pie Recipe

Kentucky Coffee Pie Recipe

2 oz slivered almonds
1 Tblspoon butter, melted
20 large marshmellows or 2 cups minis
1 cup very strong black coffee
1/2 pint heavy cream, whipped
9" pre-baked pie shell

Topping:
Spread almonds on a cookie sheet and
drizzle with melted butter
Bake for 10 minutes in a preheated 300 degree oven.
set aside.

Filling:

Place marshmellows in a large saucepan, stirring to melt.
Add coffee.
Cook over low heat until marshmellows are melted.
Cool.
Fold in whipped cream.

Spread filling evenly in pie shell.
Sprinkle toasted almonds on top.
Refrigerate.

Kentucky Pumpkin Pie Recipe

Kentucky Pumpkin Pie Recipe Secret~

The secret to achieving such a creamy taste and perfect texture of this pumpkin pie is to begin baking your pie, in a preheated 425 degrees for 15 minutes- do NOT remove pie from oven- turn the oven down to 350 degrees and continue baking for and additional 45 to 50 minutes.


Kentucky Pumpkin Pie Recipe

1 large can of pumpkin (15-16 oz)
1 unbaked deep dish pie crust
2 eggs, lightly beaten
3/4 cup sugar
1 tsp cinnamon
1/4 tsp ground cloves
1/2 tsp nutmeg
1/2 tsp ground ginger
1/2 tsp salt
1 1/2 cups evaporated milk (12 oz can)
*cool whip or whipped cream for topping (optional)

In a large bowl:
Mix eggs and sugar, cinnamon, cloves, nutmeg, ginger and salt.
Stir in milk and pumpkin.
Mix well, until the mixture is smooth.
Pour into pie shell and bake at 450 for 15 minutes
turn oven down and bake for additional 45-50 minutes.
Cool on wire rack.
*top with a dollup of whipped cream right before serving.

Kentucky Zucchini Cakes recipe

Kentucky Zucchini Cakes

2 cups peeled & grated zucchini, drained well
2 eggs, beaten
1 Tblsp grated onion
1/4 tsp celery seed
1/2 tsp Worcestershire sauce
1/2 to 1 tsp old bay seasoning
1 cup + or - regular or Italian seasoned bread crumbs

In a large bowl,
mix all ingredients together.
Form into patties
Place in a preheated skillet with a little olive oil.
Fry until done

Kentucky Soft Custard - Original Recipe

Original Kentucky Soft Custard Recipe

In a double broiler add:

2/3 cup milk
1 egg yolk
1/4 cup sugar
splash of vanilla

Cook until slightly thickened.

Pour custard sauce in individual cups.
Chill.
Serve either for breakfast or as a dessert item

variations:
top with a dollup of whipped cream or
top with fresh blueberries, blackberries, raspberries or strawberries

Kentucky Cream Cake Recipe

Kentucky Cream Cake Recipe

preheat oven to 350 degrees

1/2 Cup veg oil
1 stick margarine, softened
2 Cups regular sugar
5 egg yolks
5 egg whites, beaten
2 /4 C all purpose flour
1 tsp soda
1 Cup buttermilk
1 tsp vanilla
1 Cup coconut
2/3 Cup chopped nuts (your favorite)

In large bowl, cream shortening and margarine with sugar.
Add egg yolks, one at a time. Beat Well.
Add flour and soda alternately with buttermilk.
Add vanilla, coconut and nuts.
Fold in egg whites.
Makes 3 8x8 layers
Bake for 35 to 40 minutes.

Kentucky Golden Bars Recipe

Kentucky Golden Bars Recipe

Heat oven to 350 degrees
Grease and flour 13 x 9 pan

In a medium bowl, mix the following ingredients:

2 cups of Baking Mix
1 and 1/2 cups Packed Brown Sugar
3 eggs
1 tsp. vanilla
1 cup Chocolate chips
1/2 cup Flaked Coconut
1 cup of your favorite chopped Nuts* optional

Spread in pan.
Before baking.
In a double broiler or in the microwave in a m/w safe bowl,
melt 3 (1 oz.each) squares semi-sweet Bakers Chocolate.

Cool a bit and then pour over the top of your bar mixture.
Cut through batter with a knife to swirl chocolate, making a marble effect.

Bake bars for 30-35 minutes.

When Cool:
Sprinkle with powdered sugar.
Cut into bars about 2 x 1 inch.

Chow Mein Candy Recipe


1 6 oz. pkg. Chocolate Morsels
1 can Chow Mein Noodles
2 pkgs. Butterscotch Morsels
1 Cup Salted Cashews
Melt morsels in double boiler,
add noodles and nuts.

Drop by coffeespoon (teaspoonful)
on a cookie sheet covered with wax paper.

Old Fashioned Kentucky Cranberry Cider Recipe

8 cups cranberry juice
6 cups apple juice
1/4 cup packed brown sugar
3 cinnamon sticks
1 Tbls whole cloves

Put the sugar, cinnamon sticks and cloves in the basket of a
large old fashioned coffee percolator.
Put the juices in the bottom of the percolator.
Let the mixture perk as if making coffee.
*serve with cinnamon stick stirrers
