4 hard boiled eggs
2 Tbls butter
1 Tbls flour
3/4 cups milk
3 Tbls cream
1/2 tsp salt
1/4 tsp white pepper
2 Tbls grated Swiss cheese
toast slices
cooked ham rounds
prepare the hard boiled eggs; separate cooked yolks from cooked whites.
whites, chop well, set aside.
yolks, rubbed through a sieve, set aside
In a skillet, melt 2 Tbl butter, stir in flour.
When the butter begins to bubble slowly add in milk and cream.
Stir until thick.
Add salt, pepper. cheese and chopped egg whites.
Continue cooking for about 1 minute.
Layer in this order;
toast,
ham,
pour topping mixture over ham layer
Sprinkle with grated yolks.
Serve Hot.
