Blackberry Dumpling Recipe

Blackberry Dumpling Recipe

1 quart fresh blackberries
1 cup + 1 Tbls sugar, divided
1/2 tsp lemon extract
1 1/2 cup all purpose flour
2 tsp baking powder
3/4 tsp salt, divided
1/4 tsp ground nutmeg
2/3 cup cream / milk


In a Dutch oven, combine the following:
blackberries
1 cup sugar
1/4 teaspoon salt
lemon extract.

Bring to a boil.
Reduce the heat and simmer for about 5 minutes.

While the blackberry mixture is boiling;
In a large mixing bowl, combine the flour, baking powder, nutmeg, 1 Tbls sugar and 1/2 tsp salt.
add the milk last.
Stir just until mixed together.

The dumpling dough will be extremely thick.
Drop by heaping tablespoons full , making six mounds on the top of the hot blackberry mixture in the dutch oven.

Cover dutch oven tightly and simmer for an additional 15 minutes.

Spoon into serving dishes.

Serve with a dollup of whipped cream if desired.

Options:
May use frozen blackberries.
May leave out the milk altogether.
May use half and half instead of milk cream.
