Two More Kentucky Pie recipes

KENTUCKY PIE RECIPE

Crust:
4 Tablespoons softened butter
3 oz. softened cream cheese
1 c. flour

Filling:
2 eggs
1/4 lb. melted butter
1/3 c. flour
1 c. semi-sweet chocolate chips
1 c. nuts, chopped
1 c. sugar
1 TB. bourbon or 1 tsp vanilla
1/8 tsp. salt

Cream 4 Tbls Butter and cream cheese.
Add 1 cup flour.
Roll in wax paper and chill 1 hour.
Roll dough out and fit into 9 inch pie pan.

Beat eggs until frothy in food processor or blender.
Add melted butter and 1/3 cup flour with other ingredients.
Process until chocolate is very coarsely chopped. (Do not over-process)
Pour into pie shell and bake at 325 degrees for 45-60 minutes,
or until the center rises and the pastry is browned.
Serve topped with a dollup of whipped cream.






KENTUCKY PIE

Crust:
Pastry for one 9 in" pie

Filling:
1 cup light corn syrup
1/2 cup sugar
1/4 cup margarine or butter
1 tsp vanilla
3 eggs
1 cup chocolate chips
1 1/2 cup pecans halves

Heat oven to 325 F.
In large bowl, combine corn syrup, sugar, margarine,
vanilla and eggs, beat well.
Stir in chocolate chips and pecans.
Bake for 55 to 65 min. or until deep golden brown
and filling is set.
Cool completely.
Store in refrigerator.
