Kentucky Snow Cream Recipe

 

 Kentucky Snow Cream Recipe

*wait until the 2nd snow of the season
*use a metal bowl for serving

8 to12 cups fresh snow
1/2 cup regular sugar
1 can evaporated milk
1 Tablespoon vanilla
3 Tablespoons of your favorite Kentucky Bourbon

In a medium mixing bowl;
Stir together milk, sugar, vanilla, and bourbon
Pour mixture over snow
Blend until creamy, adding extra snow if needed
Scoop your snow cream into a metal bowl for serving

Original Sugar Plum Recipe


 Original Sugar Plum Recipe

You'll need several clean Mason jars with lids.
Wash plums well.
Prick each one with a fork.
Sprinkle with sugar.

Lay plums, out on the counter or on brown paper to dry.

Pack sugared plums in jars.
Be sure and sprinkle the sugar plums with a little more sugar during packing.

The sugar in the jar adds to the beauty and the taste

of this home made confection.

You can also tie a jute or rag-tie bow around the top

with a personalized label and give this old fashioned favorite as a gift.

Use either red or wild goose plums.

Blackberry Dumpling Recipe

Blackberry Dumpling Recipe

1 quart fresh blackberries
1 cup + 1 Tbls sugar, divided
1/2 tsp lemon extract
1 1/2 cup all purpose flour
2 tsp baking powder
3/4 tsp salt, divided
1/4 tsp ground nutmeg
2/3 cup cream / milk


In a Dutch oven, combine the following:
blackberries
1 cup sugar
1/4 teaspoon salt
lemon extract.

Bring to a boil.
Reduce the heat and simmer for about 5 minutes.

While the blackberry mixture is boiling;
In a large mixing bowl, combine the flour, baking powder, nutmeg, 1 Tbls sugar and 1/2 tsp salt.
add the milk last.
Stir just until mixed together.

The dumpling dough will be extremely thick.
Drop by heaping tablespoons full , making six mounds on the top of the hot blackberry mixture in the dutch oven.

Cover dutch oven tightly and simmer for an additional 15 minutes.

Spoon into serving dishes.

Serve with a dollup of whipped cream if desired.

Options:
May use frozen blackberries.
May leave out the milk altogether.
May use half and half instead of milk cream.

Buttermilk Biscuit Recipe

Buttermilk Biscuit Recipe
Preheat oven to 400 degrees

4 cups self-rising flour
1 Tbls. sugar
1 Tbls. baking powder
2 cups + buttermilk
2/3 cup shortening


In a large bread bowl;
Mix together
flour, sugar, baking powder buttermilk and shortening, but do not knead.
Roll out your dough to right at 1 inch thick.
Cut out biscuits using a biscuit cutter or an inverted ice tea glass.
Brush the tops with additional buttermilk right before placing on the cookie pan.

Place on greased cookie pan, put in hot oven.

Bake for about 15 minutes.

Old Fashioned Tart Apple Crisp Recipe

Old Fashioned Tart Apple Crisp Recipe -

preheat oven to 450 degrees

6 tart apples, pared, seeded, cored and cut into eighths
2 Tbl white sugar
1/4 tsp cinnamon
1 cup flour
1/4 cup brown sugar
1/2 cup stick butter, cold

In a small bowl mix white sugar and cinnamon
In another bowl, place flour, brown sugar and butter.
Using your hand, mix in the butter until crumbly.

1st layer; Place prepared apples into 8 x 12 pan
2nd layer; sprinkle sugar cinnamon mixture over apples.
3rd layer; spread crumbly butter mixture over apples and pat down firm.

Bake for 30 minutes or until apples are tender

serving ideas;
Breakfast-
serve with heavy cream or with sausage or ham.

Dinner or Supper-
Serve with hard sauce or sweetened whip cream as a
dessert.

Boiled Potatoes in Sour Cream - Old Recipe

4 medium potatoes, pared and quartered
1 small onion, minced
salt & pepper to taste
enough water to cover potatoes while cooking
2 Tbls butter
4 Tbls sour cream

Place potatoes in a saucepan,
add onions, salt, pepper and water.
simmer until tender
Drain well.
Add butter and sour cream
Cover and shake gently until mixed.

Kentucky Goldenrod Egg Recipe - Old Time

4 hard boiled eggs
2 Tbls butter
1 Tbls flour
3/4 cups milk
3 Tbls cream
1/2 tsp salt
1/4 tsp white pepper
2 Tbls grated Swiss cheese
toast slices
cooked ham rounds

prepare the hard boiled eggs; separate cooked yolks from cooked whites.
whites, chop well, set aside.
yolks, rubbed through a sieve, set aside

In a skillet, melt 2 Tbl butter, stir in flour.
When the butter begins to bubble slowly add in milk and cream.
Stir until thick.
Add salt, pepper. cheese and chopped egg whites.
Continue cooking for about 1 minute.

Layer in this order;
toast,
ham,
pour topping mixture over ham layer
Sprinkle with grated yolks.
Serve Hot.

Kentucky Bourbon Oatmeal Cookies Recipe

Kentucky Bourbon Oatmeal Cookies Recipe
Old recipe (late 1940's)

This recipe originated back when cake mixes first became readily available. It was in the middle to late 1940's that Duncan Hines began marketing boxes of dry cake mixes

preheated 375 degree oven

1 cup margarine, softened
1 1/2 cup brown sugar
1 egg, beaten
1 box of yellow cake mix, divided in half
3 Tablespoons Kentucky Makers Mark Bourbon
3 cups Quick cooking Oats
1 cup chopped nuts *optional

Cream together margarine and sugar in a med to large mixing bowl
Add egg, water, 1/2 package of the cake mix, bourbon, oats and *nuts.

Drop by teaspoonful on un-greased baking sheet about 2 inches apart.
Bake for 10 minutes. Do not over bake - bake for
Only 10 minutes, the cookies wont look like they are done,
but they will harden as they cool.

cool slightly before removing cookies from baking sheet.
Place the other half of the cake mix in a storage bag and seal.
You will be making another batch sooner than you think !

Old Time Molasses Cake - Amish Recipe

2 cups all purpose flour
3/4 cups molasses
1/4 cup sugar
2 tsp soda
1 egg
1/2 cup buttermilk or sour milk
1/2 cup hot water

Mix all of the ingredients thoroughly.
Bake in your cake pan
at 325 to 350 degrees for 30-40 minutes

Dandelions and Egg recipe
Old Amish recipe

*make sure your dandelions are not completely mature-
older dandelion stalks are too bitter to fry up.

Fry dandelion greens in butter until crisp.
They will turn black as they cook as
they are supposed to, so dont think they are burned.
Just be sure to continue to add more butter, a little at a time.
Be sure and add a little salt too.
If you can still see any green, then they need more frying.

When the dandelions are done, kinda black looking
put some eggs on top, cover your pan and turn the burner off.
Let them sit on the burner till the eggs are done.
tastes just like bacon and eggs if you do them up right.

Old Time Christmas Treat Apple Leather Recipe

Apple Leather Recipe
old time Christmas Treat

preheated 250 degee oven

3 cups applesauce
1/4 tsp nutmeg
1/2 cup sugar
powdered sugar
chopped nuts (optional)

In small bowl:
mix applesauce, nutmeg and sugar.
Spread in shallow pan 1/2 " thick.
Bake for 3 hours.

Take out and when nearly dry,
dust surface with powdered sugar and
place the apple mixture on the surface.
Pat down, add chopped nuts if desired
roll up mixture like a jelly roll.
Slice thin.

Store in airtight container.

Apple leather was a special treat, usually saved for Holidays and Birthdays

2 Tablespoons liquor
1 Cup milk, hot or cold
sugar, to taste

Add 2 Tablespoons Brandy, Sherry or Rum to 1 cup of Milk.
Stir.
Sweeten to taste.
Serve at once.

Wash, peel and quarter a sour apple.
In a saucepan:
cover quartered apple with water and simmer until tender.
Mash to a pulp in the water.
Sweeten with sugar to taste.

Add enough water to make 1 glass full

Old Time Sweet Kentucky Cider Pie Recipe

1 cup sugar + 4 Tbls for meringue
6 Tbls flour
2 cups apple cider
1/2 cup water
2 eggs, separated
1 baked pie crust

In large saucepan mix sugar and flour.
Add cider, water and 2 well beaten egg yolks.
Cook until thick and pour into baked pie crust.

Using 2 egg whites and 4 Tbls sugar, make up a meringue for top of pie.
Place in medium hot oven to brown meringue.

Kentucky Coffee Pie Recipe

Kentucky Coffee Pie Recipe

2 oz slivered almonds
1 Tblspoon butter, melted
20 large marshmellows or 2 cups minis
1 cup very strong black coffee
1/2 pint heavy cream, whipped
9" pre-baked pie shell

Topping:
Spread almonds on a cookie sheet and
drizzle with melted butter
Bake for 10 minutes in a preheated 300 degree oven.
set aside.

Filling:

Place marshmellows in a large saucepan, stirring to melt.
Add coffee.
Cook over low heat until marshmellows are melted.
Cool.
Fold in whipped cream.

Spread filling evenly in pie shell.
Sprinkle toasted almonds on top.
Refrigerate.

Kentucky Soft Custard - Original Recipe

Original Kentucky Soft Custard Recipe

In a double broiler add:

2/3 cup milk
1 egg yolk
1/4 cup sugar
splash of vanilla

Cook until slightly thickened.

Pour custard sauce in individual cups.
Chill.
Serve either for breakfast or as a dessert item

variations:
top with a dollup of whipped cream or
top with fresh blueberries, blackberries, raspberries or strawberries

Kentucky Cream Cake Recipe

preheat oven to 350 degrees

1/2 Cup veg oil
1 stick margarine, softened
2 Cups regular sugar
5 egg yolks
5 egg whites, beaten
2 /4 C all purpose flour
1 tsp soda
1 Cup buttermilk
1 tsp vanilla
1 Cup coconut
2/3 Cup chopped nuts (your favorite)

In large bowl, cream shortening and margarine with sugar.
Add egg yolks, one at a time. Beat Well.
Add flour and soda alternately with buttermilk.
Add vanilla, coconut and nuts.
Fold in egg whites.
Makes 3 8x8 layers
Bake for 35 to 40 minutes.

Old Fashioned Kentucky Cranberry Cider Recipe

8 cups cranberry juice
6 cups apple juice
1/4 cup packed brown sugar
3 cinnamon sticks
1 Tbls whole cloves

Put the sugar, cinnamon sticks and cloves in the basket of a
large old fashioned coffee percolator.
Put the juices in the bottom of the percolator.
Let the mixture perk as if making coffee.
*serve with cinnamon stick stirrers
